Eden Mussels.

With so much fresh seafood on our shores each day, its easy to make it a hero of any feast.

Here are a couple of simple recipes using fresh seafood and seasonings to bring a little of the Sapphire Coast to your table.

If you are with us during the April holidays, you can buy your seafood at a number of farm gates and suppliers. If you are chasing Eden Mussels you can also buy them straight from the boat at the Eden Wharf and chat to the farmers about their favourite recipes.

This recipe for Salt & Pepper Oysters is fabulous because you can use the seasoned rice flour on any type of seafood, make a meal of it by tossing them through a salad or simply serve it as a tasting plate.

Salt & Pepper Oysters

2 Jars of Sydney Rock Oysters

Sea salt

Peppercorns

Chillies

Rice flour

Sweet chilli sauce

Drain the oysters and dry on a paper towel.

Dry roast the sea salt, peppercorns and chillies and then put them in a blender and reduce to a powder.

Season the rice flour with the spices and then lightly coat the oysters.

Shallow fry in oil and serve garnished with coriander and a slice of lime. Gary & Jo also like to add a drizzle of sweet chilli sauce to serve.
